This is just a little quesadilla PSA. In theory, quesadillas are such a quick, easy, and cheesily delicious meal – but if you’ve ever tried to flip a 2-tortilla, overstuffed quesadilla and lost half of its innards in the process, this tip can save your dinner!
So – resist the temptation to make one giant quesadilla. Instead, fill two tortillas and fold each in half. They can still get cozy in the pan together!
When it’s time to flip them, slide your spatula under the curved side of the quesadilla and flip it over on the fold. Same with the other half, and then do a little switcheroo!
Having the folded edges helps keep the good stuff inside while you’re eating, too!
The quesadilla pictured above was made with whole-wheat flour tortillas and the black bean filling from these crunchy tacos – but quesadillas are a great way to use up leftovers, like this one with cheddar, leftover grilled chicken, and spinach:
