A Quick Quesadilla Tip.

0 · May 14, 2015 · 4 Comments

This is just a little quesadilla PSA. In theory, quesadillas are such a quick, easy, and cheesily delicious meal – but if you’ve ever tried to flip a 2-tortilla, overstuffed quesadilla and lost half of its innards in the process, this tip can save your dinner!

So – resist the temptation to make one giant quesadilla. Instead, fill two tortillas and fold each in half. They can still get cozy in the pan together!

When it’s time to flip them, slide your spatula under the curved side of the quesadilla and flip it over on the fold. Same with the other half, and then do a little switcheroo!

Having the folded edges helps keep the good stuff inside while you’re eating, too!

The quesadilla pictured above was made with whole-wheat flour tortillas and the black bean filling from these crunchy tacos – but quesadillas are a great way to use up leftovers, like this one with cheddar, leftover grilled chicken, and spinach:

chicken, cheese, and spinach quesadillaThank you, spinach, for making a lunch with lots of melty cheese feel so virtuous.

If you need quesadilla inspiration, check out these ideas!

Chicken, Sweet Potato, and Spinach Quesadillas from Sweet Tooth Sweet Life (love this combo, especially with the quick pickled onions)

Chicken and Broccoli Quesadillas from Once a Month Mom (the best way to use leftover broccoli)

Pepperoni Pizza Quesadillas from Snixy Kitchen (these are good with spinach and other veggies, too – and you must call them pizzadillas)

Charred Cauliflower Quesadillas from Smitten Kitchen (haven’t tried these yet but look how yum)

And I have now typed “quesadilla” so many times that it looks SO weird that it can’t possibly be a real word. The end.

About Me

Hey, I’m Bet! I love food and welcoming family and friends to the table with it. This is where I share what we’re eating – mostly “real”, family-friendly, doable dinners, plus breakfast foods, snacks, and of course, my favorite homemade sweet treats. I love to meal plan, hoard freezer meals, and include my girls in the cooking process as much as I can (while still preserving a little sanity). Thanks for visiting – I hope you find some new favorite recipes here!
