Three things happened last week that led to this breakfast:
1. I borrowed this book, Whole Grain Baking from King Arthur Flour from the library. I immediately wanted to bake ALL THE THINGS. There are hundreds of recipes – Whole Wheat Cranberry-Orange Country Loaf? Butter-Nut Blondies? Whole Wheat Croissants?? Where does one even start? I love that the recipes use a variety of whole grains, and they include ingredient weights (so if you have a kitchen scale, you can use less dishes and be more precise) and nutrition information.
2. Jay went to the grocery store for me to pick up a couple of things. Ground pork was not on the list, but it appeared in one of the bags.
3. Our three-year-old is obsessed…obsessed…with eating oatmeal for breakfast. She’s had it every single morning for weeks. Fortunately, it’s easy to make a big pot of these steel cut oats and just warm it up – but I’ve been having a bowl with her, and a daily breakfast cookie, and I’m a teeny tiny bit over oats for the moment.
So last Saturday I made cornmeal-maple biscuits from the cookbook while Jay mixed up a slightly edited version of this breakfast sausage from Macheesmo. We had never made sausage before, but I really liked being able to control the ingredients (since many brands include high fructose corn syrup and MSG) – and we loved the sweet/savory balance from the maple syrup and herbs. It was also less greasy than sausage patties tend to be. Homemade sausage = definitely, definitely worth the effort. (And yes, we’re putting maple syrup in everything this week.)
And those biscuits – I’ll make them again and again. They’re drop biscuits, so you just plop the dough onto the pan, and the crunch from the cornmeal made me so happy. They’re not the kind of biscuit you could split open and make a sandwich out of, but they would be great beside a bowl of chili or potato soup, and the subtle maple flavor made them perfect for breakfast.
Another plus – we had leftover sausage and biscuits, so I got to experience this meal – and get an oatmeal reprieve – two days in a row! #winning
