Food for Thought #7: April.

Just a little dance show at our favorite park!

1.// I’m a few days early on my FFT post, mostly because I’m trying to perfect a Mother’s Day recipe for you. The most recent butterscotch scone attempt looked like this:

So, yeah, I’m still working on ’em. ;o)

2.// The girls helped my mom plant a little garden last week! They were so into it. We’re attempting watermelon, green beans, squash, and pumpkins. Somehow Jay and I both have black thumbs, even though all 4 of our parents have green ones. I’m hoping it skips a generation (and also staying far away from our little seedlings so they don’t feel threatened).

3.// Our church has been doing a once a month cooking class and it’s SO much fun. This month, the theme was Spanish tapas and I’ve craved bacon-wrapped dates every single day since then. (Wrap each pitted date in half a strip of bacon, skewer them with a toothpick, and place them on a foil-lined baking sheet with sides. Bake at 350 for 25-30ish minutes until they’re crisp, chewy, decadent, sweet, salty, divinely delicious little mouthfuls.)

4.// I’m sure I’m killing you harping on this citrus kale salad, but my affection hasn’t waned. We ordered this super handy little juicer that fits right on the glass Pyrex measuring cup you already have, and it has changed my lemon-juicing life!

5.// My mom passed this book on to me – The Last Chinese Chef – and I totally enjoyed both the story and the peek at true Chinese cuisine. I recommend it!

6.// It’s almost May, and I have about 6 weeks left before we meet this baby girl! I’m working on a few posts to have waiting in the wings when she arrives, but at some point I’m going to have to switch focus to, you know, any other preparatory things, since so far I’ve done no things. Plus, my prioritizing tends to lean in the “try to make a mobile like this” direction, instead of anything practical. Wish me luck!! ;o)

  • did the bacon wrapped dates have a little bit of goat cheese stuffed in the middle?
    OMG. i had them at a BSF fellowship once and then made them myself for a potluck last year. totally weird, but incredibly delicious!!!
