Four Ingredient Fudgsicles.

Need a super easy summer treat? (I don’t care if school started back, it’s STILL SUMMER and we can eat fudgsicles if we want to. We might even deserve them more?)

These fun little fudge pops have only four ingredients – I didn’t even have to take a trip to the store! Coconut milk, cocoa powder, maple syrup, and vanilla – aaaand done.


In other words, you don’t need the 18 ingredients listed on the back of the actual Fudgsicles box.

You can combine it all in a blender – or just whisk it up!

I got these fun push-up pop molds for Christmas, but you can use any popsicle molds, or ye olde Dixie cup + stick technique!

This is a great treat for kids (or, um, grown-ups) with special dietary needs, since they’re dairy-free and don’t have the stabilizers and preservatives you find in the store-bought version. Plus, they have a deep, rich chocolate flavor while somehow still retaining a nostalgic pudding-pop taste. Plus plus, everyone knows that if you sweeten something with maple syrup instead of sugar it turns into health food. And they’re less than 100 calories each!

My niece and nephews were in town and helped us eat our fudgsicles (while I chased people around trying to get them to hold still so I could take pictures)! #chocolategoatee

Four-Ingredient Fudgsicles.

  • Prep Time: 7 minutes
  • Cook Time: just freeze 'em!
  • Total Time: -28572613.3 minute
  • Yield: about 2.25 cups of liquid fudgsicle; we made 6 pops

Ingredients

  • 1 (14 oz) can coconut milk (I used low-fat)
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1.5 teaspoons vanilla extract
  • Optional: pinch of salt

Instructions

Combine all ingredients in a blender and mix until thoroughly combined (or use a whisk to blend the cocoa powder with the syrup and vanilla, and then whisk in the coconut milk). Divide into popsicle molds and freeze until solid.
