A Few Bonus Pizza Tips.

Please enjoy the following bonus pizza tips (in the form of, um, what NOT to do) written by my talented sister Laurie after her first homemade frozen pizza adventure!

Step 1: Make pizza dough following the 4-pizza recipe. Divide the dough ball in half. Separate one half into 2 parts to cook tonight. Separate the other half into 3 parts to make and freeze. Let rest.

Step 2: Stretch, top, and bake 2 pizzas for dinner. Stretch and parbake 3 other crusts. Eat dinner. After dinner, top 3 crusts for freezing.

Step 3: Remember that your freezer looks like this, and is completely full:

Rearrange things in the freezer drawer to make room for flash freezing. Realize that the only spot is the bin where the ice cubes live and you will have to flash freeze one pizza at a time. Put first pizza in ice cube nest. Close drawer.

Step 4: Discover that actually, there is NOT room for the pizza to fit there after all and that “compact icemaker” is clearly a misnomer. Remove some ice to make the pizza fit.

Step 5: Text your sister to ask how long it takes something to flash freeze. She will reply with a guess of 20-30 minutes. This will turn out to be a perfect guess. Apparently it is also the amount of time it takes for the icemaker to dump a new batch of ice.

Step 6: Pick off ice cubes. Then pick cheese off of ice cubes and stick back on pizza. Place pizza in plastic freezer bag. Place next pizza in icemaker for flash freezing. Move things around in freezer to try to find a place to put finished pizza. You may have to make a small sacrifice:

Step 7: Eventually you will have 3 frozen pizzas in your freezer. And next time, maybe you will make sure there is room in the freezer by eating something you’ve been hoarding a delicious freezer meal the night before you begin this project!

  • I belly-laughed and wiped tears as I read this! It's a perfect illustration of the old Murphy's Law: anything that can go wrong, will go wrong. Although the sacrifice you had to make partway through was definitely an up-side. You deserved a little comfort at that point, Laurie!

  • This is some really good information about making pizza bags. It is cool that you can fit these in just plastic bags. However, I would want to find a bag or box that was a sturdy bag. That way, I wouldn't have to worry about them being crushed in my freezer.

    • Hi Ivy! I've found that once they're frozen, you can stack them up and they're pretty solid - no extra protection needed! :)
