Meal Plan of the Month #1 – January.

I’m a big proponent of meal planning to alleviate dinnertime stress, so welcome to a new type of post – the Meal Plan of the Month! Like I mentioned in this post on meal planning, I usually plan and shop for 5 meals per week so that if our plans change, I don’t end up with food going to waste. This week, we had dinner with friends one night and a leftovers night in addition to these meals.

#1 – Jalapeno-cheddar turkey burgers, guacamole, coconut oil roasted sweet potato bites, steam-in-the-bag broccoli

#2 – Chicken vegetable soup (I made this soup, minus noodles and roux, plus frozen peas and corn), whole wheat bread (we get the honey whole wheat from Great Harvest Bread Company and luuurrrve it)

#3 – Pork tenderloin, roasted potatoes and butternut squash (recipe coming this week!), steamed & pureed cauliflower (no, that’s not two kinds of potatoes on my plate – I wish! – and it’s just seasoned with salt and pepper)

#4 – beef and broccoli stir-fry (this was a new to me recipe, and it was good, but not make-it-again good), brown rice

#5 – Chipotle. Ahh, Chipotle. Thanks for existing. See this post for my other favorite takeout spots!

It’s cracking me up how much broccoli we ate this week – I think I meant to have green beans with our burgers but we didn’t have any.

  • I love that you are sharing your monthly meal plan! We do the same thing. It's the only way to stay sane and on a shoe string student loan budget while I'm in med school with 3 kids!! I'm always looking for yummy, healthy, new, cost-effective meals to add to our arsenal, and a bunch of your delicious recipes have made it into the meal plan for January. This is what our plan looked like this week...

    Sun: Lunch- Honey Pecan Chicken Salad Pitas with Fruit, Dinner- Carnitas Burrito Bowls (Yay!!!)
    Mon: Swiss Chicken Bake, Brown Rice, Sautéed Zucchini
    Tues: Greek Turkey Spinach Muffins with Balsamic Glaze, Carrot Soufflé, Green Beans
    Wed: Grilled Flank Steak, Baked Spaghetti Squash, Kale and Apple Salad
    Thurs: Leftovers
    Fri: Date Night!!! We budget for 1 date a month, and 1 planned family dinner out a month
    Sat: Grandma's Pizza (Yay!!), Salad

    Some other "Becipes" (as my husband has begun to call them) that have made an appearance this month include crunchy black bean tacos, jalapeño turkey burgers, roasted sweet potatoes, roasted pork tenderloin, better steamed broccoli, and potato soup. So, yeah, I've pretty much stolen your whole blog for my meal plan :) You are a blessing to me from afar!
